I have created a new delicious dessert that I will be selling at the event, which I call the Quinoa Chocolate Dream. It is super yummy, nut free and of course gluten free, vegan and with no refined sugar too.
Base 1 cup of oats 1 cup of hemp seeds (hulled) 1 cup of pitted dates 2 tbs water Topping ½ cup of melted cacao butter ½ cup of melted coconut oil 3 tbs cacao powder ½ cup of puffed quinoa ½ cup of puffed rice 3 tbs maple syrup or raw local honey 1 cup of dried fruit (I use cherries, mulberries, goji and incan berries) To make the base: In a food processor blend the oats, hemp and dates together then add the water as the mixer is going. This should form a dough like substance which you press into your silicone pan. Place in the fridge to set whilst you make the top layer. To make the topping: Over a saucepan of hot water place a bowl to melt the cacao butter and oil. In a separate mixing bowl add the rest of the ingredients and mix together then add the cacao butter and oil and mix well. Pour over the base and leave to set in the fridge for 30 mins.
