I made these up today and they have been such a hit with the kids, baby, me and friends.. making another batch tomorrow to take away to the Green Gathering. They are also perfect for baby led weaning. Hope you enjoy them.
Makes 10-12 muffins
3/4 cup self raising doves Gf flour 3/4 cup chickpea flour 3/4 cup plant milk or water 1/2 cup vegan soft cheese 1 Tbs fire cider or apple cider vinegar 1 cup sundried tomatoes 1 garlic clove 1 Tbs coconut oil 1 courgette 1 tsp raw grey sea salt 2 Tbs engevita 1 Tbs fresh basil
Place the coconut oil, courgette and sundried tomatoes into a pan and lightly sauté. The. Put them into the blender and very lightly whizz them.
In a separate bowl mix the dried ingredients together. Then add in the whizzed ingredients and the other ingredients and mix well till a nice batter. Pour into muffin pan and cook in the oven at 160 degrees c for 25mins. Place on Vera I to cool and then store in airtight container
