Healthy Crumble
With apples all around us now is a wonderful time to make a delicious crumble. It always makes me sad when i see fruit on the floor rotting and not being used.. So lets get out and collect natures bounty and make use. There are so many things we can do with things like apples, juice, crumble, chutneys, pies etc..
Hope you enjoy this crumble recipe, my family certainly do.
Crumble Topping
½ cup coconut oil melted
1 cup coconut sugar
250g oats
1 cup ground almonds (optional)
Fruit Base
4 cups of chopped fruit ( I like to use 3 1/2 cups of apples, 1 banana and 1/2 cup of raisins)
1 tbs coconut oil
¼ cup of water
1 tsp mixed spice
Sweeten if needed with coconut sugar or raw local honey
Fruit Base
In a pan add the coconut oil and leave to melt, add in the fruit and mixed spice and stir well, then add in the water and leave to simmer gently for 10-20mins depending on the fruit.
Pour into an oven safe dish
Crumble Topping
In another pan melt the coconut oil and add in the coconut sugar. Take off the heat and add the almonds and oats and stir till well mixed.
Pour this onto of the fruit and place in the oven at 160 C for 20-30mins.
Some of my favourite combos are:
Apple and Blackberries
Gooseberries and Raisins
Rhubarb and apple (usually put some coconut sugar with these)
Blackberries and currants
