Beetroot & Horseradish Canape

this is one of my all time favourite canapes... sooo tasty, such a lovely treat.

1 raw beetroot
1 cup soaked and drained cashew nuts
2 tbs grated horseradish
3 tbs coconut cream
1/2 cup olive oil
1/2 tbs good salt
Place all the ingredients into a food processor and blend until smooth.
Serve on a slice of cucumber with optional homemade tomato sauce and a cashew nut.
