Pesto WIth A Kick
2 cups packed fresh basil
1 cup of dittander or pepper grass
3 Tbsp pine nuts or hulled hemp seeds
3 large cloves garlic (i like to use black garlic
2 Tbsp lemon juice
1/4 tsp sea salt - ideally icelandic or celtic
2-3 Tbsp extra virgin olive oil
3-6 Tbsp water (plus more as needed)
I love dittander, or peppergrass. I have it growing in my garden and nothing beats the wasabi like flavour. Its amazing in salads and cooked food. But I love it in a pesto or salad dressing. Hope you enjoy it too.. This is a plant that can be foraged in coastal areas or you can purchase the plants from herbal haven and grow in your garden like I do.. Word of caution it does spread so in a large container is a good idea.
Add all the ingredients into a food processor and blend until as smooth as you like it..
