Pumpkin Pie


One of the best things about autumn is pumpkin pie. Being part american I used to love the thanksgiving treat of it.. so today we are using a pumpkin we have grown to make a soup and a sweet pie. Yum. The cool thing is you can do loads of different bases for this.

the great thing about pumpkins is they can be eaten raw so this is something you can do as a cooked dessert or a raw one xx

Filling

2 cups of raw pumpkin chopped

1 tin of coconut cream

2 tsp cinnamon powder

1 tsp ginger powder

1 cup of coconut sugar


blend until smooth


Base

Raw- 2 cups of cashew nuts, 1 cup of dates

blend until it is sticky and can be pressed flat for a base



other options- use a sheet of gluten free vegan puff pastry
