Raw Thai Soup
Raw food doesn't have to be cold or just a salad. This delicious warm soup can be made in five minutes. You do need a high powered blender. The
ingredients below will serve four smaller portion for starters or two main courses.
2 cups of just under boiling water
1 stick celery
1 carrot
1 courgette
1 small red onion
2 cloves garlic
1/2 lemon unpeeled
1 chilli
1 knob ginger
1/2 cup cashew nuts
Small handful of coriander leaves
2 tsp salt and pepper
Place all ingredients into blender and blend untll smooth then serve.
