Quinoa flatbread (or pizza base)

Just made this last night and then again today and boy is it good, and super simple to make. I don’t eat any gluten and really do miss the whole concept of a sandwich sometimes but this really hits the spot. Last night I made it as a pizza base and today was a flatbread sandwich 

Pre soak in water for covered 1 cup of uncooked quinoa (ideally overnight but anything from 15mins will work)

3/4 cup of water

1 cup of courgette

1/2 cup of basil

1/2 tsp bicarbonate of soda

pinch of salt and pepper

Pre soak the quinoa ideally overnight and strain and rinse well.  Place into a blender along with the other ingredients.  Whizz on high speed until you have a smooth batter.  Pour this into a lined baking tin or a silicone mould.  Cook at 220 for 25mins.  Take out and leave to cool. 

I like to serve this with cashew cheese, avocado, tomatoes, pea shoots and sauerkraut.

If making it as a pizza base cook for 15mins then cover with a light spreading of tomato sauce, cook for another 5 mins then place your pre cooked veg ontop and cook for final 5 mins.  Serve with a generous drizzle of olive oil.
