Pili Nut Cheese


I used to love cheese but I couldn't keep eating it knowing I was hurting and buying into such a terrible industry. I am not a big fan of soy or processed foods but needed something to replace my cravings. I then found coconut cheese which helped me make the switch off dairy.. and now I can make my own which I love. This was an experiment which I have to say has worked a treat. Pili nuts are a great source of essential fat and vitamin E, and also delicious. Hope you enjoy

70g pili nuts 1 tsp turmeric powder 1 inch knob ginger 1 garlic clove 1/2 tsp sea salt 1 cup of plant milk 4 Tbs olive oil 1/4 cup agar flakes Juice of half a lemon In a food processor blend the first set of ingredients so it's a fine powder On the hob bring the wet ingredients to the boil and then simmer for 10 mins whilst stirring occasionally. Add the liquid into the food processor and blend for 2-3 mins until all mixed together and thickened. Then add in the lemon juice blend briefly and pour into silicone or plastic bowl or mould. Leave to set in the fridge for a few hours or until firm Tap out of mould by squeezing the sides lightly Store in the refrigerator for up for 5 days
